Cornflake & Peanut Butter Snack Crack

I made these with leftover Cornflakes, but Rice Krispies or most other savoury ones will do the job. These are full of wholesome nuts and seeds and are incredibly moreish so are the ultimate healthy snack. They're also vegan

ingredients

  • 75g cornflakes

  • 45g finely chopped hazelnuts or pistachios or almonds

  • 35g coconut flakes, crushed

  • 40g pumpkin seeds

  • 40g sesame seeds

  • 125g maple syrup

  • 50g peanut butter

  • 3/4 tsp salt

instructions

Preheat oven to 180C/fan 160C/gas 4. Combine the dry stuff in a big bowl and the maple syrup, peanut butter and salt in a small li bowl.

Fold the syrup etc into the dry, then press down hard onto a lined baking tray - a glass here helps.

Place in the oven for 15-17 minutes until golden. Leave to cool, then break into bits and eat. Lasts 10 days.
