Nut, Seed & Date Energy Bar

If you find your hands always reaching for the cookies, these are your guys. Packed with wholesome nuts, loads of nutrient-dense seeds such as chia + flaxseeds and oats + dates for slow-release energy, these will satisfy you when the sugar craving hits AND give you a big boost at the same time. PLUS you don’t need to bake them so they’re ready wickedly quickly.

ingredients

makes 16 bars

  • 120g almonds, hazelnuts, walnuts, cashews or pecans, or a mix

  • 300g dates, de-stoned

  • 200g jumbo oats

  • 75g honey, maple syrup or agave 

  • 120g smooth peanut butter

  • 25g chia seeds

  • 45g sunflower seeds

  • 30g flaxseeds

  • 30g sesame seeds

instructions

Preheat the oven to 180C/160C fan/gas 4. 

Place the nuts on one side of a lined baking tray and the oats on the other and place in the oven for 10-12 minutes until just beginning to colour, then allow to cool. Meanwhile, finely chop the dates.

Roughly chop the nuts when cool and transfer to a bowl along with the dates and seeds. Use your fingertips to mix everything and distribute the dates.

Warm the honey and peanut butter and ¾ tsp salt over a low heat, then pour over everything in the bowl. mix well.

Transfer to a 20cm x 20cm brownie tin lined with paper, push down firmly with your fingers, then cover with a sheet of paper and use a glass to flatten down until smooth. Place in the freezer or fridge for 15-20 minutes to firm up, then cut into 16 squares. Will last 7 days.
