Raspberry Chai Blondie 

These are super easy to whip up and perfect as a little pick me up with a cup of tea. You can use whatever fruit you have, blueberries and blackberries or  even dried fruit such as apricots or dates would all be nice in this. 

ingredients

  • 250g butter

  • 300g soft brown sugar

  • 2 eggs

  • 240g plain flour

  • 1 tsp baking powder

  • 2 tsp ground cardamom

  • 3/4 tsp ground cinnamon

  • 1 tsp ground pepper

  • 1 tsp ground ginger

  • 1/4 tsp ground cloves

  • 1  tsp salt

  • 150g white chocolate

  • 100g fresh or frozen raspberries 

instructions

Preheat the oven to 160C/140C fan. Line a 20cm x20cm brownie tin with baking paper.

Melt the butter and allow to cool slightly.

Beat the sugar and the eggs for 2 minutes until thick and pale.

Whisk in the melted butter, bit by bit.

Combine the flour, baking powder, spices and salt, then fold into mix.

Stir the chocolate and raspberries into the mix.

Pour the mix into the tin. Smooth the top and place in the oven for 25-28 minutes until glossy on top and soft in the middle. Allow to cool, then slice and enjoy.
